Well, hello lovely folks, and thanks for stopping by. Grab a spot in the shade and pull up a chair … great food … great company … and my friends are always welcome here.

This year I will be sharing Christmas Day with family. How lovely that is. I live with my daughter and grandson, given that my grandson is only four and a half I’m guessing we’ll be up before sunrise and waiting to surprise Santa!

Later in the day we will be sitting down to Christmas Lunch with our extended family, We have been invited again to the lovely home of my ex-husband and still best friend, his wife and their beautiful daughter. My Grandsons daddy will also be there.

We will laugh and grow teary remembering loved ones no longer with us, but living on forever in our happiest memories.

We will eat till we are sated, and raise a glass or two of whatever takes our fancy. Then we open the gifts waiting under the tree. (If almost five-year-old Grandson can bear to wait that long.)

We celebrate such a richly diverse day here, no matter what the setting or where you are in Australia you can be certain that you will be warmly welcomed.

Here are a couple of RECIPES for just two of the dishes I’ll be preparing and sharing this year.

ROAST PORK WITH CARAMELIZED APPLES & ONIONS.

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon sea salt flakes
  • 2.5 kg or 5lb-6ozs pork leg roast
  • 2 onions, thickly sliced
  • 4 Jazz apples, thickly sliced
  • 1/4 cup maple syrup
  • 1 teaspoon thyme sprigs
  • Roast potatoes, to serve (see tip)

METHOD:

  1. Step 1

    Preheat oven to 230C or 210C fan-forced. OR 440 to 420 Fahrenheit. Rub oil and salt over pork, pressing into scored rind. Place in a roasting tin and cook for 45 mins. Reduce oven to 180°C or 160°C fan.   OR  350 to 320 Fahrenheit. Cook for 30 mins.

  2. Step 2

    Place thick onion slices around the pork and top with the apple slices. Drizzle the maple syrup over the apple slices and return to the oven for another 30 mins, or until pork is cooked through. Remove from oven.

  3. Step 3

    Scatter thyme sprigs over the apple. Rest pork for 10 mins, before slicing. Serve with caramelised apple and onion and roast potatoes. Drizzle over pan juices.

    AND for Dessert PASSIONFRUIT AND MANGO PAVLOVA.

INGREDIENTS:

 4 egg whites

    1 cup caster sugar

    1 teaspoon white vinegar

    2 cups thickened cream

    2 ripe mangoes, sliced thinly

    6 passionfruit, pulp removed

 METHOD:

  • Method
  1. Step 1

    Preheat oven to 140°C.  280 Fahrenheit. Line a baking tray with nonstick baking paper.

  2. Step 2

    Place egg whites in the bowl of an electric mixer and beat until soft peaks form. Gradually add caster sugar a little at a time, beating well between each addition, until thick and glossy. Fold through white vinegar.

  3. Step 3

    Transfer the mixture to the prepared tray and, using a large spatula, form into a disc shape.

  4. Step 4

    Place in preheated oven and bake for 1 hour 15 minutes or until a skewer inserted into the center comes out clean. Turn off the oven and allow the pavlova to cool for 1-2 hours. Do not open the door until the oven has completely cooled.

  5. Step 5

    Whip cream until medium peaks form and spread over the cooled pavlova. Decorate with mangoes and passionfruit.

    TROPICAL BREEZE COCKTAIL.

  • 750ml (3 cups) chilled unsweetened pineapple juice
  • 185ml (3/4 cup) Malibu liqueur
  • 125ml (1/2 cup) Bacardi rum
  • 1 cup ice cubes
  • 500g chilled rockmelon, deseeded, peeled, coarsely chopped
  • Thin rockmelon wedges, to serve

METHOD:

  1. Step 1

    Place the pineapple juice, Malibu, Bacardi, ice and rockmelon in the jug of a blender and blend until smooth.

  2. Step 2

    Divide the mixture among serving glasses. Place a melon wedge on the edge of each glass to serve.

    And then of course for the young ones and those of us who don’t drink alcohol…we have a Tropical Peach MOCKTAIL.

  • Crushed ice
  • 900ml peach nectar
  • 1.2L soda water

METHOD

 

Step 1Place a scoop of ice in each glass, top with 60ml nectar and 80ml soda water. SERVE. 

And of course when in Australia indulge yourself with an ice cold Aussie Beer …

  1. Sounds like a perfectly lovely day, Soooz! I’ve often wondered what celebrating Christmas in summer weather would be like. My daughter and son-in-law are hosting our Christmas Eve party and Anne and I are hosting Christmas Day dinner. Phew! I’m tired just thinking about it!

  2. Hi, John! We always seem to wonder about what we don’t have…lol. I’ve always wanted to experience a winter Christmas with all the fairytale snow, etc. We have a Christmas in July party up in the mountains every winter. It hasn’t snowed yet, but we only missed it by two days last year. Your Christmas sounds perfect. Family is what it’s all about. I feel such sorrow for all the lonely ones in our world. Will be visiting some street folks on our way out to lunch, just to drop off a few little things that may cheer them up, and let them know that people do care. I know you will have a joyous time with your loved ones.

    Looks like it’s going to be a cold one here (no snow though, or else it’ll melt away after a few hours – too salty down here in Cornwall) so I’m having Panettone Bread and Butter Pudding with lashings of Clotted Cream/Ice cream after Duck with Orange and Cranberry sauce Yum! Have a great Christmas with all your family 🙂
